I used to love Cuban sandwiches. A grilled cheese with yumminess AND a pickle? Thankfully, because of the good people at Follow Your Heart I can make a similar plant based vegan friendly version with beets! Its insanely good and super easy to make!
I'm going to say it - this is the best pizza I've ever had. It was super easy to make, so much better than frozen, and cheaper than delivery. It reminds me exactly of a BBQ chicken pizza, only its made with BBQ jackfruit, which is so much healthier. Chicken may be deemed the healthy meat, but its full of cholesterol and saturated fat, while jackfruit has 0 cholesterol, 0 saturated fat, 739 awesome mg of potassium, and is a super source of vitamins, minerals, phytonutrients, electrolytes, fiber, and protein. So not only does this pizza taste good, its incredibly good for you!
Looking for a plant based, vegan version of an egg salad sandwich? Look no further! I haven't had egg salad in years and have been missing it, until now! There's something about the combination of mashed chickpeas, Vegenaise, celery, pickle relish, and dill that tastes JUST LIKE an egg salad sandwich!
One of the things I’ve really missed since going vegan is a good reuben sandwich. Well, those days are over! The combination of beets, sauerkraut, homemade vegan thousand island dressing, vegan cheese, pickles, and rye bread makes this sandwich everything I’ve missed!
This is probably the best snack or appetizer in the universe. Yeah, I said it. Creamy avocado, crunchy toast, ripe tomatoes, tart lemon juice, and a balsamic glaze. Its looks super fancy, but its so easy to make!
It can't really get better than fresh spring rolls! These can be a little tricky to make, only due to the rice paper. It may take a few tries to get one right, but don't give up - its totally worth it!
Looking for another alternative to a typical veggie burger? Try out my portobello mushroom burger! A quick balsamic marinade with garlic and black pepper and you'll be grilling in no time. Top with a zesty red pepper hummus sauce for a tangy zip!
This BBQ Eggplant Sandwich is ridiculously easy and quick - it only has 2 main ingredients. A little peeling, a little slicing, a short marinade, and a quick grill and you're ready for a great summer sandwich. The great thing is you can make exactly as many sandwiches as you like because each slice you cut from the eggplant is one sandwich.
January Taco Tuesdays continue! I love all of my taco recipes, but I tend to inhale these tacos faster than any of the other ones! They’re spicy, a little sweet, and SO GOOD. Cauliflower, potatoes, garam masala, garlic, and ginger round these tacos out. Also included is my green chutney recipe!
January Taco Tuesdays continue! Try these spicy Asian Tacos for a twist on the classic Mexi Taco. These are also SO easy and quick to make. Roast some cauliflower, chop some veggies, and you’re on your way to a spicy meal!
January Taco Tuesdays are beginning! Each Tuesday in January I'll post a new taco recipe, and I'm starting off the month with my Mexi Tacos. Hold on to your hats, these tacos are going to blow your MIND! They are SO easy and quick to make. Roast some sweet potatoes, heat up some black beans and onions, make the cashew cheese, and top with more deliciousness!
I LOVE these wraps! These are my go to wraps when I need something quick, filling, and delicious to eat. A few years ago I was moving in between apartments and didn't have a refrigerator for a week so I packed a cooler with the ingredients of these wraps and ate them every day!
Have you ever had a collard green in place of a tortilla? Its amazing! Collards hold up really well to wet ingredients and stay crunchy even after a couple of days in the fridge. These are great little appetizers for a party, or great for week day lunches.
This is my absolute favorite breakfast. Tom and I make it almost every Saturday and it really gets us going for a full day of hiking, yard work, or running errands. Its crazy how good a simple and easy sandwich can be.
Mmmmm, barbecue sandwiches. I think every single family gathering I've ever gone to has had a form of barbecued sandwiches. Smokey, sweet, spicy; barbecue has it all. It was hard when I first thought I'd never be able to enjoy a barbecue sandwich again after going plant based, but oh, I was so wrong! These are the easiest, tastiest sandwich you can make and they are perfect to whip up in your slow-cooker.
